Ray's mushroom medley with garlic and lovage


One of the best things about visiting Afognak over Labor Day is that the hedgehog mushrooms are in season, and that there are a lot of them growing near camp.

This year I was cooking up the old standard pasta with a pesto sauce when Ray offered to cook up some mushrooms on the side to add to the pasta.  No way my kids would eat the pasta if we added the mushrooms directly to the pasta, and really the mushrooms would be wasted on kids - right?

We harvested the hedgehogs near camp and Ray cooked them up in a cast iron skillet with some dried morels he had harvested up on the Kenai Peninsula.  We added a head of garlic from my garden and right at the end some beach lovage that grows all around camp.  He even added a dash of our sacred rum ration.

It was REALLY good.
