Mushrooms for dinner |
While we did not bring home any meat from Afognak we did bring back a game bag filled with hedgehog mushrooms. That's a lot of mushrooms, and in terms of culinary value they might even be more valuable than the meat we did not bring back. Hands down, they are my favorite mushroom for cooking. Very meaty and dense with an excellent flavor. And they are generally pretty hard to find too. But I know of a spot where every year on Labor Day they are to be found. So maybe while scarce and rare on the ground, at least they are predictable!
Julie's husband Ray is processing all the mushrooms. He lightly sautés them in oil and then vacuum packs and freezes them. So later in the winter we can use them on pizzas or in sauces.
So in addition to the good times we brought home the 'meat' er rather the mushrooms for the freezer. A successful foraging trip!
